I can't stress how easy these are to make. When I posted the picture of the ones I made, so many people asked how I made them so I thought I'd blog about it for you all to follow.
All you need is:
1 good sized banana
2 large eggs
Yes that's it. I recommend blending them in a blender rather than mashing and whisking with a fork. The consistency will be smooth and lump-free allowing the perfect pancakes. Once I've got the batter, I melt coconut oil in a pan and carefully pour the batter to make a palm-sized pancake and cook it!
It's so easy to do and you can top it with yoghurt, fruit, nutella, peanut butter- anything you fancy. Hope someone finds this helpful and it works for them!
